Yes, sometimes you just need to build something from source... even in Ubuntu. Building from source is a pretty common operation when you're doing development on any Unixy platform, including OSX and Ubuntu. But if you don't *need* to build from source, even in OSX you can still use a package manager like MacPorts which turns this operation into a one line command -- heck there are even a couple of GUI's to make it all clicky clicky, if you're into that sort of thing.
